     Dans grub, pour configurer le boot d'un Windows 2000, il te manque les
2 lignes
suivantes:

makeactive
boot

     Donc pour démarrer ton Windows 2000, ton fichier grub doit
avoir ceci:

title Windows 2000
map (hd0) (hd2)
map (hd2) (hd0)
rootnoverify (hd2,0)
chainloader +1
makeactive
boot
